Green Tea Panna Cotta
The classic panna cotta is a light dessert made of full cream, sugar and vanilla pods. Instead of vanilla, I used green tea powder. It gives the panna cotta a fresh and distinct taste, and it looks great with the hint of green color. To complement the delicate flavor I served a blueberry coulis with it.

Agar-Agar or 3 sheets of soaked gelatine

Green tea powder – Matcha |
500 g

Blueberries

Preparation

Have at least four molds (glass, ceramic, or silicone) ready. Each should hold one deciliter.

Panna cotta | Warm the cream, milk, and sugar on low heat until the sugar has completely dissolved. Then add the green tea powder and whisk all well together.
- Add the agar-agar power and bring the mix to a boil continually whisking.
- Pour the creamy mixture into the molds and let them cool down before refrigerating them. Let them in the fridge for at least four hours to set. The green tea will drop slightly to the bottom, giving the panna cotta, once turned over, a beautiful green finish on the top.
- Coulis | Bring the water to a boil and add two teaspoons of sugar. Add the blueberries and cook them for 15 minutes.
- With an immersion blender blend the berries to a puree. Continue to pass the puree through a sieve for a smooth coulis.
Serve | Gently run a knife along the edge, turn the molds onto the serving plates and let the panna cotta drop. It might need some patience. Spoon some of the blueberry coulis over the Panna cotta's and decorate with some fresh blueberries.
