Pink Radicchio Lettuce
It was love at first sight when I saw the vibrant color of this lettuce at my local greengrocer. The beautiful pink radicchio needs nothing more than a slightly sweet vinaigrette to balance its pleasant bitterness. I served it with a fruity mandarin-yuzu and cold-pressed rapeseed oil dressing, finished with a sprinkle of pink peppercorns.
    Ingredients | Serves 4  
  | 4 | Small pink radicchio lettuce | 
| 50 cl | Mandarin juice | 
| 2 Tsp | Yuzu juice | 
| 100 cl | Rapeseed oil | 
| 
 | Salt | 
| 
 | Fresh ground pink pepper | 
| 
 | Small leaves to decorate | 
    Preparation  
  - Wash the whole lettuce under cold water. Remove the larger outer leafes. Carefully shake off the water.
- Cut away the bottom part with the core of the lettuce keeping the leafes together.
- Arrange the the lettuce in deep plates so they look like flowers. 
- Whisk the ingredients for the salad dressing together and spoon over the lettuce.
- Decorate with small green leafes and sprinkle with fresh ground pink pepper.
