Friend, Hairstylist and Inspirator

Our journey began when Denise cut and styled my hair. Denise has broad knowledge, is outspoken and has a great sense of humor. We soon discovered that we share the taste for good food, wine, and cocktails. We started to cook together and invite friends and guests to our dinners. She once said to me; «you motivated me to cook» – well she certainly didn't need much encouragement.

Denise has a unique talent for flavors. Her fineness in refining a sauce to perfection is remarkable – to give a sauce the balanced taste, the extra kick, the subtle hint. When I ask her how she created the dish, she will tell me the ingredients used, when it comes to quantifying and measuring each component she smiles. It's like with all good chefs, you either have a sense for taste, and you compose and add the ingredients with feeling or not. She has it – that gut feeling for tasty food.

Denise is also one of the few people I can cook as a team. We usually compose a menu together, each of us creating two of the four courses. We respect and don't interfere with each other's cooking.

Private Dinner by Mark & Denise – cooking for 24 guests at the restaurant Bottega Berta was our last challenge. We did rise to the occasion and yet again learned a lot once more.
