A Fairy Tale Inspired Holiday Menu

The holiday season is just around the corner and with it come the cosy meals with loved ones and friends. In order to spend as much time as possible with your guests, I have put together four courses that you can prepare well beforehand and then only heat up and serve. The theme of the four courses is warm and fruity flavours.

Chestnut soup with lingonberries

Hot chestnuts, chestnuts very hot! Who hasn’t heard the calls of the street vendors praising their roasted chestnuts for sale? The soup is creamy, warming and finely seasoned. The sour lingonberries are little explosions of taste.

Oranges and Beetroot Salad

The delicate, earthy-sweet taste of the beetroot and the citrus freshness of the sun-ripened oranges together with the crunchy pomegranate seeds complement each other wonderfully and are a contrast to the first course.

Beef ragout with Raz el Hanout

Braised for hours in oriental spices and with carrots and oranges, the meat becomes buttery soft and the sauce spicy. Served together with mashed potatoes, an irresistible classic with a twist.

The popular, creamy Italian classic with coffee and chocolate is refined with apple pieces and a good dash of calvados. The perfect way to round off this holiday menu!
